Strawberry Compote

Compote is a sweet fruit sauce made with pieces of fresh (or frozen) fruit and some sugar, cooked briefly on the stove. You could call the end result a chunky or textured fruit syrup. Ideal for desserts to top cakes, cheesecakes or meringue, added to Cremè Fraiche or Cream and swirled onto a dessert.

We have made a strawberry Compote. You can used Rhubarb, Blackberries or Raspberries in the same recipe.

This recipe has been used in the Summer Berry Pavlova recipe.

Ingredients:

250 g Strawberries (hulled and cut into quarters)

125 g Caster sugar

Method:

Add sugar and strawberries to a small saucepan. Cook on low heat until liquid comes out and sugar dissolves. Continue cooking until in coats the back of a spoon. Skim well during cooking. Runny Glossy Jam like consistency is what you are needing.

Set aside and allow to cool.
