Stone Fruit Clafoutis
2 each Nectarines (or a fruit of your choice)
30g Butter
15g Caster Sugar
Batter
2 Each Eggs
45g Caster Sugar
5ml Vanilla Paste
20g Butter (melted)
20g Flour
50ml Milk
75ml Cream
3ml Salt
Make the batter by whisking all the ingredients together until there are no lumps, allow to rest in the fridge for at least 1 hour before using.
Pre heat the oven to 180C.
Cut the nectarines in half, remove the seed and cut each half in half again.
Heat an18cm frying pan and add the butter, place the nectarine pieces around the pan and cook until it starts to release some juices (2 to 3 minutes).
Add the caster sugar to the pan and shake.
Turn the nectarines over and cook for another 2 minutes.
Turn the heat off
Pour the batter over the nectarines and place the pan in the preheated oven for 12 to15 minutes or until golden brown and just set.
Remove from oven, sprinkle with icing sugar and serve with pouring cream – or vanilla ice cream
