Stone Fruit Clafoutis 

2 each Nectarines (or a fruit of your choice)

30g Butter

15g Caster Sugar

Batter

2 Each Eggs

45g Caster Sugar

5ml Vanilla Paste

20g Butter (melted)

20g Flour

50ml Milk

75ml Cream

3ml Salt

  • Make the batter by whisking all the ingredients together until there are no lumps, allow to rest in the fridge for at least 1 hour before using.

  • Pre heat the oven to 180C.

  • Cut the nectarines in half, remove the seed and cut each half in half again.

  • Heat an18cm frying pan and add the butter, place the nectarine pieces around the pan and cook until it starts to release some juices (2 to 3 minutes).

  • Add the caster sugar to the pan and shake.

  • Turn the nectarines over and cook for another 2 minutes.

  • Turn the heat off

  • Pour the batter over the nectarines and place the pan in the preheated oven for 12 to15 minutes or until golden brown and just set.

  • Remove from oven, sprinkle with icing sugar and serve with pouring cream – or vanilla ice cream
