Mushroom Forestry

In Tyabb, in a large Apple production plant there is something special growing and this is where you will find David from Mushroom Forestry tending to his prized, truly seasonal gourmet Mushrooms. With various rooms, tailored to ideal temperatures and humidity to enhance and allow optimum growing conditions of each species. The farm has been built within insulated walls, with internal temperatures that naturally fluctuate throughout the year, ranging from lows of 12 degrees in Winter to 25 degrees in Summer.

Providing his mushrooms in a wholesale capacity to quality restaurants, local farm gates on the Peninsula and also select restaurants in Sydney. With (award winning) Shiitake, Oyster, Lion’s Mane varieties and seasonal varieties too. We were fortunate enough to visit and enjoy a tour and also cook with serval varieties included into one of Diego’s recipes.
